I am about to use Webflow for a few clients. QUESTIONS:
What plan do I need:
… to allow them to add/edit CMS?
… to edit text areas on a given page?
I assume I can restrict them from design changes?
Do they get their own login?

You will need the CMS plan for the website. You can then invite them as a collaborator, which creates a login for them and will allow them to login and do those things you mentioned.
They will not be able to login to the Webflow Designer (i.e. they cannot make design changes).
