If I have users enabled with the purchase history. Does it only track subscriptions or does it track all purchases. Also if someone signs up after the fact will webflow be able to back track and add in their previous purchase history?

I believe Webflow only allows you to show users their current membership subscriptions.
If you want to enable users to see their entire purchase history, I recommend you checkout our latest app at Monto – Customer Portals!
Users can see their entire purchase history (including orders prior to adding the Customer Portal app to your site).
They can also see their Monto subscriptions, become an affiliate, access special files you upload, and more!
