I’m new to the whole technicalities related to web development but I wanted to make a knowledge base related to finance that is very interactive. I want to have user input values that could be then used to return statistics and a graphical representation of that data. Will this viable using webflow as a platform or would I have to use something more complex or make the website traditionally?

Ou absolutely! Watch everything from here > Webflow University For me practice is the best course, but sometimes you need to sit down and watch some videos 
and Webflow videos are awesome and super fun.
