I want to build a form in Webflow but want to host the site on my own server. How can I get the form to work without Webflow hosting. I am not a coder so please let me know in nice basic terms.

You will need to use a third party form tool that can work with your existing form.
Take a look at these third party form integrations ant tutorials.
https://formspree.io/ is pretty popular with self hosters.
