Collection template on per-item basis

I’ve got a products collection with several categories, and each category has sub-categories. I would like to be able to sort the items by sub-category into different containers on the category template page. The problem I’m having is that if I’m working on the Fast Food page, and I set one container to only show burgers, and the next to only show french fries, then all of the other category pages do the same thing.

How can I call out specific sub-categories into containers on a category template page while not affecting the other category pages?
