Building out new version of client CMS site - Do I duplicate project and then?

Client want’s a new reDesign and they are on the CMS plan, question is
Do I duplicate the site so that IF they need any new tweaks to the current LIVE site, the new design won’t scupper that.

Is it easy to then switch out the CMS hosting to the new project, any downtime?

What’s best practices when reBuidling a webflow CMS site for client?
