It appears this feature has been missing / broken since 2017 and I was wondering if and when if ever this will be added?
Right now it is impossible to update a reference field value in a collection via a Zap. Here is the issue described in 2017: Ability to use Reference fields with Zapier/CMS API

Use the API or the Designer are the current options.
Hi @webdev , could you please elaborate more about using API? I am currently able to create CMS items through zapier but I should be able to reference the newly added items with another collection. Thank you!
