I would like to know what percentage Stripe takes from each payment.
Does this percentage apply to the final price (including VAT) shown on Webflow?

hi @Frantoio_Cavalli about Stripe commission can be found on their website, generally it is about 1.5% +25c for European cards that is fair price for all their responsibilities.
Do not forget that if you are small business WF is taking 2% tribute 
from price for connection ability to payment services with no responsibilities.
Simply said you have to pay 2% to Webflow allowing you to connect (like plug to socket) to payment gates (services) and let services like Stripe handle all heavy lifting.
