Ideally, on my blog posts, I want to be able to have the images take up 100% width of my container but the text to be readable, so about 50-60% of page width. Is this possible within the same rich text box?

Give a class to your Rich Text Block:

Select a paragraph inside the RTB, select All paragraphs in the selector dropdown, then click under it to limit to the sub class you’ve just created on the RTB:
Now apply a padding right:
Now you have a text that’s narrower than the full bleed image.
