Ok, sorry for my ignorance, and sorry if this is mentioned somewhere else that I cannot see…
I have created my Nav menu but I cant figure out how to link to the sections
i.e. Projects nav link goes to …“Projects” section. etc.

Its in the element properties area, give the “projects” section a unique ID and then in your nav link properties choose the option to link on the same page and you’ll see the section id in the next drop down field.
Yeah as @pingram3541 said, first slect the element you want to scroll to and give it a unique ID:
Then choose that Id in the Settings for the nav link people are clicking on:
