I did see something about adding custom code in the header of the page and within the add elements sections an option to add an embedded element.
Would this be the way to add a chart in the page?

Although we do not have a Google Charts Widget yet, you can embed a google chart to your site page, by using the Embed widget: Custom code in head and body tags | Webflow University
Basically, you want to first create your chart in Google, using your spreadsheet as the source of the chart.

Once you create a chart, you can generate some html script that can be pasted into an Embed widget:
