I noticed that all my recent blog posts have the same published date, December 21st, even the ones I published recently.

Hey there,
This is because you have the wrong dynamic field selected. You’re pulling information from the Author’s publish date, and not that of the Blog Post.
Scroll a bit further down to see the post’s publish date and that should fix it.
