Hey,
I set up a CMS collection including a Rich Text field. When I try to bind this to a paragraph it doesn’t show in the drop down. Try the same with a plain text field works though.

I think you need to use a rich text block in the designer – if there are styled elements in the text, then a paragraph element won’t be able to render them.

As @nomoredesign said, CMS Rich text fields only works with Rich text elements, even if you only use simple texts as data.
CMS Text fields works with Text and paragraphe elements
