what would be best approach to designing an E commerce design with product and collection pages as shown? and how page design similar to below. New to Webflow all insight would be much appreciated. Would Grid be best?

Me, personally I would use Flex. Grid is great too but the layout is still somewhat linear. These examples are really nice. Easily achievable with Flex or Grid. You will have to use some absolute and relative positioning for some of the secondary images on the product pages and the lookbook pages along with some neat interactions for the secondary image animations on scroll. Webflow university has a ton of great videos on Flexbox to give you an idea of how to use it. just take a little time to understand how to structure the website content.
