How to set ALT text dynamically for Open Graph (OG) Image settings within the Collection Page settings? Have they moved it? Since I strongly believe it could be set in the ‘Open Graph settings’ within the CMS collection page settings.
Do you guys know where to set the ALT text dynamically for CMS collections?

Do you mean the og:image:alt META? You could add that if you want to but it’s unpopular since it’s often abused. Yoast even removed it 3 years ago.
However in the CMS, alt text in general is managed either;
For static images - by creating an alt text text field and populating it
For multi image fields - by editing the alt text on each image individually
Then when you place an image on the canvas and bind it, you have options on where you want the alt text to come from, or you can set something manual.
For og:image:alt, you’d;
Create a CMS image field for your og:image
Create a CMS text field for your og:image:alt
Bind the CMS image to your og:image field under page settings
Add a META tage for your og:image:alt in the CMS page template’s before-head custom code and bind it to your alt text field for that image

You have the right idea but META tags are void elements. Don’t close with /> that XHTML syntax, not HTML5. You just want to close with >
To test, you can just publish your page and inspect the HTML.
But you’ll get more open graph feedback using Facebook’s Sharing Debugger.
