I went in to edit the copy in a rich text field, hit save, publish. Changes werent there. I go back into the rich text field and the changes Ive made havent been saved.

This sounds like a bug that has existed for at least five years and that Webflow seems unwilling to address. Sporadically it will simply not save or mangle changes you have made to rich text elements. Yes, this causes data loss. Webflow sucks. Sorry. As soon as something better comes along, stop using Webflow. That’s about the only long-term advice available.
For what it’s worth, a semi-workaround is to cut & paste back in the entire text within the paragraph, or if that doesn’t work then within the surrounding paragraphs as well. This triggers Webflow to reparse the html code and fix whatever is corrupted in its internal representation of the text. The problem is there is no sign changes won’t be saved until you leave and return to the page, so this doesn’t really help much.
