I currently have a TEMPLATE for a cms collection page for my products.
However, for some pages I would like to deviate from the template that i made.
Is this possible? How can i do this?

I think you’re asking whether certain CMS items can have a different page design / layout from the main collection page.
The answer is no, not directly. You can however vary the page significantly using conditional visibility tied to CMS fields.
