Is the hover animation used on the nav links on the following website possible to do using webflow interactions and if so how can I do it?

Yes it is possible, this is little tricky to build not sure if I can explain well.
The way I’ve done this before is that you place a separate DIV for the background and give fixed positioning with a fixed height.
And for the animation just create using Hover Interaction. Little bit of CSS would also do that, if you know.
