Is there any way to reorder variables? I’ve inputted our colors and systems a bit out of order and it’d be best if it was displayed in order of scales / colors.

I’m wondering the same. It looks like it’s not possible, at least I can’t find the setting.
Replying to this as I had the same question and discovered a solution. It doesn’t look like there’s a way out of the box. I noticed Timothy Ricks using the dot method to reorder, though.
e.g.
…colours
…borders
.paragraph-small
sizing
More dots, the higher they rank
