Why do some animations have the thunderbolt icon on them and not others? I can’t seem to work out the pattern…

It means that individual element is the trigger to that animation. Which is what starts an interaction. You can click on a text - then go into interactions panel and animation another element. But if you click that text and then animate that text - it will give the green icon.
This works best if you want to reuse that interaction on another trigger element somewhere else, without rebuilding it every single time.
