How can I prevent a Webflow link to an article from populating the author when I share to social (it even appears in texts)? I don’t want the author to show.

Do you mean that you do not want it to appear on the page when someone clicks a social-shared link? If so, you’d do a bit of scripting and add a special querystring param like ?social that tells your script to suppress the author.
If you mean that you don’t want the author’s name to be picked up in the social share preview, then just define your own preview. For articles that’s usually a hero image, title, and plaintext brief. Define those in your social settings, and most social media will use those rather than constructing them from page text.
