Would it be possible to override the ID of a Section that is a symbol?

You can update the ID of a section within a Symbol just like any other element ID, however as you’ve probably guessed this will change the ID of that element anywhere it’s used on the site.
As far as I can tell it’s not possible to update the ID of a specific instance of the Symbol with the Content Override feature, but I know Webflow is planning on a number of updates to this feature (including the ability to update instance styles) so it may be a good idea to add to the Wishlist

Also, it doesn’t look like it’s possible to override images in a Lightbox link correct?
Correct, I believe only the options listed in the “Type” dropdown are currently available to override—so for now, only standard Image Elements:
