How do i open menu in designer? I don’t have the navbar settings dropdown, where you can open the menu like in the video tutorials.

Looks like the menu is a custom one, not the Webflow navbar component. I think custom menus are better.
If you want to edit the menu links ect., you need to click on nav menu > reset the display settings > do the changes > set to display none again.
