add a filter to my products page so users can sort by different types of cheese as well as just the jams? I saw that I might need to use a multi-reference field for that in CMS, but I haven’t fully understood how that works or whether it is the correct solution.

Use Finsweet CMS filter to setup filtering by product type ( jams / cheese ), cheese types, etc. There’s a bit of a learning curve but it’s a great tool.
For prices, just store a number and then prefix it with your currency symbol. Or else, you can use SA5’s Format library.
