I know we can convert all images from the asset manager but can we convert images from within the CMS ? Specifically from a multi-image field ? I have lots of items with lots of images from that one multi-image field.

Yes, Webflow has an image optimization tool for the CMS as well.
It should get image fields, multi-image, and images within rich-text content.
Have a look at the docs to locate it.
I’ve looked into it, it seems Webflow doesn’t have a native tool to do so - only paid subscription via apps
CMS AVIF optimization? No it’s built in natively.
WEBP as well.
