Is it possible to save different versions of a Webflow site, for example version01 and version02 so that I can revert back to a previous version if needed?
Not possible to have branches like in VC. Changes are “backed up” and can be restored. See Save & restore backups | Webflow University
Just one big Caveat; ID’s of elements are changed on restore so if you are using the API this can create issues.

What!? Surely as the creator/designer I write the ID’s of elements and these are not going to be changed by Webflow? Why would Webflow change my ID’s?
CMS item ID’s in the DB not element ID’s is what I was referring to.
