I can’t select an element in a CMS collection and assign a value to it - the drop down in the setting panel has disappeared.

This is a known issue we are looking into right now. Currently you cannot edit dynamic bindings inside a symbol.
As a workaround you can unlink the symbol and make edits to the bindings – keep in mind thought that once unlinked you cannot relink.
This is definitely not an ideal workaround but it should unblock you for now while we work on a fix for this.
